In just a few simple steps, you'll create a hearty bowl featuring protein-packed black bean mash, zesty rice with a lemon and coriander kick, creamy avocado, and perfectly spiced bell peppers. Feel free to top it off with grated cheese or crumbled feta for an extra layer of indulgence.
The Burrito Bowl offers a customisable, wholesome, and satisfying meal that's perfect for busy days.
Ingredients
1 can of black beans or pinto beans
1-2 chipotles (adjust to your spice preference)
1 cup of rice
Lemon juice
Coridander (optional)
Salt and pepper
2 ripe avocados
12-14 cherry tomatoes
2-3 roasted bell peppers (you can buy pre-roasted ones to save time)
2 cans of sweet corn
Grated cheese or crumbled feta (optional)
Mexican seasoning (e.g., chili powder, cumin, paprika)
Preparation
Prepare the Rice:
Cook the rice according to the package instructions.
Season the cooked rice with a squeeze of lemon juice & coriander. Mix and set aside.
Fry / Air Fry the Bell Peppers:
Slice the bell peppers into strips.
In a frying pan, add a little oil and heat it over medium heat.
Add the sliced bell peppers and sprinkle with Mexican or fajita seasoning.
Fry for 5-6 minutes until the peppers are slightly charred and tender. Alternatively, you can air fry them with less oil at 375°F (190°C) for the same amount of time.
Make the Black Bean Mash:
In a frying pan, heat a little oil over medium heat.
Add the beans (including the water) and chipotles to the pan.
Fry for a few minutes
Mash them with a fork until slightly chunky, then set aside.
Prepare the Avocado Mash:
Mash the avocados in a bowl.
Season with lemon juice, salt, and pepper to taste.
Assemble the Bowl:
In individual bowls / meal prep containers, start with a portion of seasoned rice.
Top with the black bean mash, roasted bell peppers, chopped tomatoes and sweet corn.
Add a dollop of avocado mash on the side.
If desired, sprinkle grated cheese or crumbled feta on top.
Optionally, add a pinch of Mexican seasoning for extra flavor.
