Easy volume snacking!
Ingredients
1-2 cucumbers (with skin), chopped
1⁄2 clove garlic, finely chopped
1 tablespoon light soy sauce
1 tablespoon rice wine vinegar
1⁄2 teaspoon sesame oil (optional)
1 teaspoon toasted sesame seeds (optional)
Salt and pepper to taste
Chilli flakes or fresh chilli, to taste
Preparation
Chop the cucumbers into bite-sized pieces and place them in a bowl.
Toss everything together and serve chilled.
Enjoy!
