Ingredients
400ml vegetable stock
10g grated ginger
2 cloves crushed garlic
1 tbsp soy sauce
1 tbsp rice vinegar
1 teaspoon sunflower oil
1 carrot, sliced into ribbons using a peeler
Handful of mangetout (snow peas)
100g noodles
Handful of bean sprouts
1 tbsp chives, finely chopped (optional)
6 frozen veggie gyoza (or replace with a handful of firm tofu, diced/chopped cooked chicken breast, or an alterntaive protein)
Preparation
Saute Aromatics:
In a medium saucepan, gently heat the sunflower oil.
Add the grated ginger and crushed garlic.
Cook for 2-3 minutes.
Simmer Broth:
Add 400ml of vegetable stock, soy sauce, and rice vinegar.
Simmer for 10 minutes.
Strain and Reheat:
Strain the ramen stock through a fine sieve to remove the ginger and garlic.
Pour it back into the saucepan.
Bring the ramen stock back to a gentle simmer.
Cook Gyoza:
Add the gyoza to the simmering ramen.
Simmer for 3 minutes.
Optional: I like to add my gyoza to my AirFryer for a few minutes to get them crispy.
Prepare Serving Bowl:
Lift the gyoza out of the ramen and into a serving bowl.
Add Noodles and Vegetables:
To the ramen broth, add the noodles, carrot ribbons, bean sprouts, and mangetout.
Cook for a further 2 minutes.
Serve and Garnish:
Ladle the ramen broth and vegetables over the gyoza in the serving bowl.
Optionally, sprinkle with finely chopped chives.
