About the Recipe

Indulge in the delightful fusion of flavours with this Halloumi, Zucchini, and Couscous recipe. This dish combines the rich and savoury goodness of grilled halloumi cheese with the vibrant taste of roasted courgette and cherry tomatoes, all served over a bed of lemon and coriander-seasoned couscous. Drizzle it with your favourite sauce and sprinkle some pine nuts for that extra crunch. It's a perfect balance of textures and tastes that's quick and easy to prepare, making it an ideal choice for a satisfying meal.

Ingredients

  • 1 pack (approximately 200-250g) of Halloumi cheese

  • 1 large Courgette (Zucchini)

  • Cherry tomatoes (about 1 cup, chopped)

  • 240g Couscous

  • 1-2 tablespoons Lemon and coriander seasoning (adjust to taste)

  • Peri peri or chili sauce (to taste)

  • 1/4 cup Pine nuts

Preparation

  1. Roast or Air-Fry Courgette and Cherry Tomatoes:

    • Slice the courgette (zucchini) into long slices vertically down the long edge.


    • Drizzle them with olive oil, season with salt and pepper, and roast or airfry for about 20-25 minutes or until tender and slightly caramelized.


  2. Grill the Halloumi:


    • Slice the halloumi cheese into thick slices.

    • Grill / oven / fry the halloumi slices until they are golden brown.

  3. Prepare the Couscous:

    • Place the couscous in a bowl.

    • Follow the package instructions to prepare the couscous, usually by adding hot water or stock.

    • Season the couscous with lemon and coriander seasoning for extra flavor.


  4. Assemble the Dish:

    • Place a generous portion of the lemon and coriander-seasoned couscous on each plate.

    • Top with the grilled halloumi slices.

    • Arrange the roasted courgette and cherry tomatoes over the couscous and halloumi.

  5. Add Sauce and Pine Nuts:

    • Drizzle peri peri or chili sauce over the dish for an extra kick.

    • Sprinkle pine nuts on top for an added crunch and nutty flavor.


  6. Serve and Enjoy!
