Simple Pesto Pasta with Halloumi and Veggies

Ingredients:

  • 400g pasta

  • 1 pack halloumi

  • 1 jar pesto sauce

  • 1 punnet mushrooms

  • 1 can mixed beans

  • 1 whole broccoli

  • 1 teaspoon olive oil

  • Chilli flakes (to taste)

  • Mixed herbs (to taste)

  • Grated cheese (for topping)


Preparation

Instructions:

  1. Preparation:

    • Chop broccoli into florets.

    • Slice halloumi and mushrooms.

  2. Cooking:

    • Air-fry broccoli until tender and slightly crispy.

    • Boil pasta until al dente, then drain.

    • In a frying pan, heat olive oil. Fry halloumi and mushrooms until golden. Add mixed beans and heat through.

  3. Assembly:

    • In a large bowl, combine cooked pasta, air-fried broccoli, halloumi, mushrooms, and mixed beans.

    • Add pesto sauce and toss until everything is evenly coated.

    • Sprinkle with chilli flakes and mixed herbs according to taste.

    • Top with grated cheese.
