Ingredients
500g rehydrated soya mince / grated tofu / mince of your choice
2 celery stalks
2 blended or grated carrots
1 cup of red lentils
1 clove of garlic (replace with Asafoetida for lower Fodmaps)
1 onion (replace with Asafoetida for lower Fodmaps)
300g roasted tomatoes (for more flavor) OR 1 tin regular chopped tomatoes
Dried basil and oregano (or you can use Italian seasoning)
Pasta or Rice to serve
Preparation
Prepare the Vegetables and Lentils:
Transfer the soya mince or grated tofu (or mince of your choice) to a pan and cook for about 5 minutes or until they start to brown.
Add the celery, carrots, garlic, and onion to the food processor (or finely chop by hand), mix until it's finely chopped.
Boil the Red Lentils:
In a separate pot, boil the red lentils for 5-6 minutes until they are partially cooked. Then drain.
Add the partially cooked red lentils and mixed vegetables to the pan, with the rest of the ingredients and cook for another 5 minutes.
Add the Sauce:
Add the roasted tomatoes or regular chopped tomatoes to the pan. If using roasted tomatoes, blend them in the food processor until smooth before adding.
Season with dried basil, oregano, or Italian seasoning.
Finish and Serve:
Simmer the sauce for about 15-20 minutes until it thickens and the lentils are fully cooked.
Serve the vegetable Bolognese sauce over AlDente pasta, spinke some cheese and Enjoy your meal!
