With a choice of soya chunks, firm tofu, or diced chicken, fresh veggies, and a zesty yogurt twist, these tacos are an ideal solution for a fast and flavourful meal.
Ingredients
Protein of your choice (Choose from: Soya chunks, Firm tofu, or Diced chicken)
Mexican or fajita seasoning
Desired salad ingredients (e.g., lettuce, cucumber, grated carrot, pepper)
Tortilla wraps
Cheese (for sprinkling)
Lime zest
Plain Greek yogurt
Preparation
Prepare Protein:
Cook your chosen protein (Soya chunks, Firm tofu, or Diced chicken) in a pan over medium-high heat. Season with Mexican or fajita seasoning until browned and cooked through.
Prep Salad Ingredients:
While the protein is cooking, chop your desired salad ingredients (e.g., lettuce, cucumber, grated carrot, and pepper).
Warm Tortilla Wraps:
In a separate pan, heat the tortilla wraps until they are warmed through, typically about 1 minute on each side.
Assemble Tacos:
Lay the warm tortilla wraps on a clean surface.
Add Ingredients:
Place the cooked and seasoned protein onto each tortilla.
Top with the prepared salad ingredients.
Sprinkle cheese over the salad for a creamy, savory touch.
Zesty Yogurt Drizzle:
Grate lime zest into plain Greek yogurt and add a teaspoon of this zesty yogurt mixture into each taco.
